Healthy pancake recipe
February 5, 2008 by Carolin · Leave a Comment
First of all making pancakes with fresh ingredients it is so easy. Making it yourself gives you food that is fresh, mold free, free of additives and less expensive.
Then take the step to change your pancakes from the average junk food to healthy whole food.
It is really easy. Simply swap the white flour for spelt flour. Spelt has a great taste and it contains a lot of nutrition. Use half whole flour and half refined.
If you use only refined spelt flour your kids won’t know the difference from their regular pancakes. Refined flour is put through a finer sieve to remove a large percentage of the bran. This gives a finer flour more like our regular wheat flour.
This is a great recipe. The pancakes are easy to cook and taste great.
This is enough for 2 kids and 1 adult.
Ingredients
2 cups of refined spelt flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
4 eggs
4 teaspoons raw cane sugar
4 tablespoons olive oil
2 cups milk
Sift together flour, baking powder, baking soda, salt and sugar.
In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in the oil.
Serve the pancakes with fresh fruits and berries.
If you need an extra sweetener use maple syrup, honey, chopped dates or raw cane sugar.
Enjoy!

How to Prepare Quinoa
October 22, 2007 by Carolin · Leave a Comment
Quinoa is a wonderful little seed. It is a tasty, nutritious replacement for rice, pasta, couscous or potatoes. It tastes somewhere between rice and lentils with a nutty flavor.
Quinoa is a very nutritious and a good source of vitamin B, C and E, calcium, phosphorus and iron.
Since quinoa contains all essential amino acids it is a complete protein. But it is still much easier to digest than proteins from meat and dairy.
Quinoa actually contains more calcium than milk. It is gluten-free and has a low Glycemic Index (GI).
To bring out the great nutty flavor prepare it like this.
1. Boil the quinoa according to instruction on the package.
2. Pour of the water.
3. Fry the quinoa gently together with sliced garlic.
The Incas worshiped quinoa and referred to is as “mother of all grains”. The seed is seen as one of the reasons that the Incas became so powerful. When the Spanish came they banned the seed to weaken their opponent.

Recipe: Wonderful Pasta in 15 min
![]() |
This pasta is fast and easy to make, inexpensive and it’s a great immune system booster - and of course delicious.
The recipe takes about 2 min longer than it takes for you to cook the pasta.
The peas are a good source of vitamin C. The onion and garlic is not just great for the taste. They have fantastic health benefits.
This dish is vegetarian with no added salt and the combination of seeds and grains make sure that you get the complete proteins you need.
Ingredients
Your favorite pasta
1 cup frozen green peas
Butter
1 onion
2 garlic cloves
A couple of cherry tomatoes
1 yellow bell pepper
½ cup of sunflower seeds
1 cup mozzarella cheese
Put the water for the pasta on the stove. Cook the pasta.
Grate onion and garlic and fry gently in butter. Add peas and some water. Allow to simmer for a couple of minutes.
Shred or chop the mozzarella.
Chop bell pepper and tomatoes.
When the pasta is done pour over the pasta in a colander. Pour the peas over the pasta. Then pour pasta and peas back into the pasta pan.
Add the mozzarella and let the pan stand on the after heat about on the stove 1 min while you stir slowly. This way the cheese melts on the pasta.
Add tomatoes and bell pepper. Top with sunflower seeds.
Voila. Dinner is served!

Healthy Recipe; None Fattening Bacon Pie
July 21, 2007 by Carolin · Leave a Comment
![]() |
If you like to eat healthy bacon is probably not the first food you think about.
But in this recipe I use the bacon as a spice instead of as the main ingredient. Since I’ve excluded all the fat cheese you actually end up with a great tasting none fattening bacon pie.
This recipe is includes no dairy products.
Ingredients:
1,3 cups (3 dl) chopped spinach
1 chopped leek
3 fresh garlic cloves finely chopped
0.2 lb (100 grams) bacon
1,3 cups (3dl) whole spelt flour
½ cup (1dl) olive oil
salt
2 eggs
1 cup (2,5dl) rice or oats milk
cayenne pepper
1. Put the oven on 390 F or 200 ºC
2. Gently fry spinach, leek and garlic together until soft. In a separate frying pan fry bacon chopped in small pieces until it starts to become crunchy. Let the crunchy bacon rest on a kitchen paper to remove excess fat.
3. Start with the crust. Put spelt flour and some salt in a bowl and stir with a spoon. Add olive oil and continue to stir. Fit into a pie plate. Bake in oven for 10 minutes.
4. Beat the eggs in a large bowl. Add rice or oats milk and a dash of cayenne pepper.
5. Spoon the spinach/leek mixture into the prepared pie crust. Add bacon on top. Then pour over the egg mixture. (You can stop here and keep the pie in the fridge or freezer for later use)
6. Bake in oven until the top is golden brown, and an inserted tooth pick comes out clean, about 50 minutes.
Serve the pie with fresh vegetables.
Everybody loves this pie; my meat loving father, my hungry brother and my picky kids. While your add it double the recipe and put one pie in the freezer.
