Paella with quinoa, shrimp and clams

Replacing rice with in your is really cool.

The result is a nuttier flavor and a more nutritious dish.

Ingredients (serves 4)

2 cups
1 chopped red union
2 chopped garlic
1 tsp olive oil
1/2 tsp saffron
3 cups vegetable broth
1 chopped red bell pepper
1 cup of frozen peas
1 lb mussels
1/2 lb peeled shrimp
2 oz white cooking wine
1 lime
salt
black pepper

Fry onions and garlic in oil. Stir in  saffron and .

Add the broth and boil 15 minuter. Add the 1 cup of frozen peas. Then boil for 5 more minutes.

Fry the bell pepper in a different pan.

Boil the mussels in the wine.

Pour of the any left over bullion from the .

Stir in bell peppers and shrimp. Add salt and pepper to taste.

Decorate with mussels and thin slices for lime on top.
