How to make Diet Popcorn

Popcorn are great snacks.
Making your own stove top popcorn very easy and inexpensive. By using whole grain, for example amaranth, quinoa or spelt, instead of corn you get a very nutritious low fat snack.
Ingredients
1/4 -1/2 cup amaranth or other grains
Preheat a skillet to high heat.
Add all the grains to and cover and stir continuously with a wooden spoon until the popping stops.
Empty the pan right away.
If seeds don’t pop well, sprinkle them lightly with water and try again later when they’ve had time to absorb the moisture. The grains should start to pop about 3 sec after being added to the pan. If it takes longer it is not hot enough and this will make the grains burn.
Season then with salt or in the same way you would season your popcorn.
For a more spicy experience:
Top your popcorn with chili or cayenne pepper.

Onion-Dill Salt
1/4 cup coarse salt
2 teaspoons dried onion flakes
2 teaspoons dried dill weed
1/4 teaspoon garlic powder
Process all ingredients in blender at high speed until mixture is very fine in texture, 30 to 45 seconds. Store in shaker.
Makes about 1/4 cup.
Herbed Salt
1/4 cup coarse salt
1 teaspoon dried basil leaves
1/2 teaspoon dried tarragon leaves
1/2 teaspoon dried chives
1/4 teaspoon oregano leaves
Process all ingredients in blender at high speed until mixture is very fine in texture, 30 to 45 seconds. Store in shaker.
Makes about 1/4 cup.
Sesame Salt
2 tablespoons coarse salt
1/4 teaspoon ground turmeric
2 tablespoons toasted sesame seeds
Process all ingredients in blender at high speed until mixture is very fine in texture, 30 to 45 seconds. Store in shaker.

To add to the “more spicy experience”, I use tabasco on popcorn and it tastes great! Great recipes, I especially like the onion-dill salt recipe…
To make it even more no fat skip the oil and use an air popper. 0 fat, until you add your toppings.
